Abelskivers

Growing up, we would often ask to spend the night at my Grammy & Papa's house. We would usually have dinner at home, sometimes go out for ice cream, sometimes watch Gram's favorite movies (Gone with the Wind, My Fair Lady, or The Wizard of Oz) and it was always a guarantee that we would have abelskivers for breakfast.

Before Williams Sonoma recently made abelskivers (filled pancakes) popular with their pan and recipe book, Gram had a friend who gave her a family recipe and pan to make these round, Dutch pancakes. Gram served them with maple & huckleberry syrup. We would usually compete to see who could eat the most. Even when we were in high school, we would ask Gram & Papa if we could spend the night and have this special breakfast with them.

When I got married, Gram gave me an abelskiver pan, and now that my mom is a grandma, we gave her a pan for Mother's Day so she can have abelskivers with her grandkids too. Lola spent the night with her Nana & Bub recently and woke up to have abelskivers in the morning. I'm sure it made Gram & Papa happy.
